Black Channa dish with Indian eggplants and drumsticks – another classic recipe from Tamil Nadu (mostly popular in Madurai region). Born and brought up in and around Madurai region, when I was a kid – my mom used to make this dish almost once every fortnight with home grown drumsticks/Moringa from my grand mothers home – yeah good old memories 😉
Recently we have been trying to eat/cook healthy food, and this dish/recipe definitely fits the menu 8)
Ingredients:
1 cup black channa – boiled
about 6 small Indian eggplants
about 10 frozen drumstick pieces
3 coarsely chopped tomatoes
1 medium sized chopped onion
3 cloves minced garlic
Sambar powder per taste
Tamarind paste per taste
Curry leaves, asafoetida, urad dhal, mustard seeds per taste
2 tablespoon oil – preferably gingelly oil
To grind:
4 tablespoon grated coconut
Preparation:
- Heat oil in pressure cooker and when the oil turns hot, add mustard seeds, urad dhal, curry leaves, and minced garlic.
- When mustard seed starts to splutter, add onions and saute them.
- Then add in chopped tomatoes, eggplants, drumstick pieces, and boiled black channa.
- Give it a good stir and add in ground coconut, and tamarind paste.
- Add salt per taste and cook in the pressure cooker until the pressure cooker gives 2 whistles.
** Traditionally this dish is served with rice but it could be had as a side dish for Chapatis as well.
